This pan heats up in a flash on an induction stove. Really really fast. It is so fast that it is perhaps a little dangerous - -you can burn stuff in a hurry. The high temperature seems to make it prone to develop erosion at the bottom -- both brown stuff and white stuff. Not sure what the white stuff is. Maybe a combination of damage to pan and something in the water. It does not scrub off.It takes a LOT of daily elbow grease -- like 10 minutes -- to keep the crust on the bottom from building up. Have thought about getting a disk sander. That being said, it is far superior (in speed) to our non-stick pans that take 5 minutes to warm up. This one boils water in about 1 min. Still, I would prefer a pan that didn't heat up quite so fast, and didn't have quite so much corrosion as well. There may be a conflict between speed and safety -- I don't know how the regulations work.The steel lid is not at all thoughtful -- it is not made of glass and does not have a vent. So you can't figure out if your food is burning (which it often does), and also the lid makes noise from the steam. We found another one. Too bad it doesn't come with a glass lid with a hole in it.It is also a bit large and shallow -- would have preferred a pan that is a little smaller with steeper sides.This may just be my new favorite pan... It is somewhere between a wok and a saute pan with a large enough capacity to cook a pretty large dish. At this price its worth buying just because you don't have one yet... A word of caution this pan is heavy and at least as big as a 4 qt saute pan. I have to admit I am beginning to think the D5 is a bit too much. These 5 ply pans are as heavy as my cast iron pans. I would have given this 5 stars because I am in love with this pan but if I am honest its a serious boat anchor. Little people beware you will need help moving this when full of food. the 6 qt saute pan is the same way, seriously heavy. I am a pretty big guy and have no real trouble tossing these around but in 20 years that may not be the case... I am sure the pan will be going strong.This note is for all clad. Seriously loose the oversized lid handles. That's just vain to turn a handle into a badge when all it does is add weight. even the sheet metal on the lids is overly heavy for no good reason. So making the pans work as well without making them so damn heavy should be one of your top goals. The pans in a pro kitchen are generally just thick aluminum for a reason. Another thing, I think you are not putting the same effort into ensuring your lids fit good as you once did. I think this has been some what obvious to me from what I have seen lately. I suppose the truth is that most who buy your higher end pans do so for status not cooking. That said you can still built for utility first. This is just my opinion.We improved our cooking skills through the pandemic and it has culminated in our desiring to finally try these pans that the "professionals" use. We used Calphalon One pans but the bottoms of the sautés pans are not flat and I couldn't stand it anymore. Well, I can see I am going to have to slightly adjust my timing on these All-Clad pans, but so far I find it very responsive and intriguing and I look forward to more culinary adventures with it. This week night pan is definitely a great all-purpose pan for many many different types of dishes you will make. It's a matter of time until I get a set. Used the all-clad cleaner but my husband suspects bon ami will work well also.Gave as a gift. My friend LOVED IT. She was so happy. She said the weigh was perfect snd allowed her to cook her favorite meal to perfection.This pan works very well indeed. Has high wall on the side and helps to prevent splatters from frying. Rather large for one person but, I can cook with a lot of rough stirring and things wont slop out the side. cleans easily just soak in water for a while. Paid 179. usd for it on amazon.This is a great pan but I gave it 4 stars because the order was supposed to be the four quart skillet and the outer box indicated 4 quart but when I opened the enter box I noticed the pan was the 3 quart...I needed a heavy skillet so I kept the pan and it is really a good quality stainless steel pan. Hopefully, quality control will be more careful and ship the correct pans in the future.Things will stick if you do not know how to use stainless steel pans. Watch a few videos before using pro pans like these and clean it right after. I own a set from a different brand and they are horrible, I'm ashamed to gift them.This pan is spectacular, easy to clean and i'm definitely purchasing more!Love the sturdy construction of this cookware.
