I'm a Henckles fan so was not surprised to find this chief knife to be more than adequate for my uses. I cook nightly and often chop foods of all textures. This knife retains it's edge, feels great in my hand, which is on the large side for a woman, and has a nice weight. I also like the 10" length, which is not common anymore.I'm glad to have a handle that will survive the use of the knife. My previous knife, a purchase made in Germany in 1969, was Solingen steel but the handle was wood. I only washed it by hand but, sadly, the handle finally deteriorated beyond repair. The blade is still good, despite having been used to attempt chopping a frozen pkg of vegetables! Won't do that again.!it was pricey but this knife will be passed on to my grandchildren and is worth every penny
